surprisingly enough, i think i have all the ingredients for this chorizo & artichoke risotto recipe already in my pantry and/or fridge to make this tonight. who keeps chorizo in their fridge you might ask?...well i do oddly enough, i love the added spice of this portuguese sausage. the only thing i hate about risotto is how long it takes to make and how attentive you have to be to it during the process, but i do love the way it tastes...
